Spanish Rice

Vegetable oil (OG recipe calls for bacon fat)
1 tsp garlic
1 chopped onion
3 rice cups of rice (rice cup = 3/4 cup)
1 15 oz tomato sauce
1/2-3/4 can water (use tomato can)
1/2 tsp cayenne pepper (to taste)
11/2 tsp salt (to taste)
Sautee garlic and onion in oil. Add rice, tomato sauce, water, cayenne pepper and salt. Mix well. Reduce heat to medium simmer and cover. Stir every 15 minutes until cooked. Cook time about 1 hour.
