Namasu (cucumber salad)

2-3 English cucumbers
1 cup vinegar
1 cup sugar
3-4 Tbsp salt
Thinly slice cucumbers with a mandolin. Sprinkle salt over cucumbers & toss. Place plastic wrap over bowl with weight & soak for 2 hours (pulls the water out of the cucumber).
In a sauce pan, mix vinegar and sugar until sugar is dissolved. DO NOT boil. Remove from heat and cool.
Drain cucumbers, and poor cooled sauce over cucumbers and marinate for 2 hours (the longer the better).
